I like your photos–and the recipe backgrounds–but what are “pearmains”? I’ve never heard of them. Thanks. Ken

pearmain is the biffin (strain of apples). it’s yellowish and greenish as well. these apples have pleasant acidulous taste but at the same time they are mealy – they don’t have much juice, so they are perfect for baking.
